1 1/2 c. sugar, unbleached
1 tsp baking soda
1 c. organic butter
1/2 tsp salt
1 tsp vanilla
1 med organic zucchini shredded ( 2 cups)
1 6 oz pkg chocolate bits ( 1 cup)
2 LG cage free eggs
1 c. chopped walnuts
2 1/2 c. all purpose flour, organic King Arthur
1/2 c. sour cream or tofutti “better than sour cream”
1/4 c. unsweetened cocoa
Preheat oven 350. Grease & flour 13 X 9 X 2 pan.
In large bowl with mixer at low speed, beat sugar, butter, vanilla and eggs until blended. Increase speed to high, beat until light & fluffy about 5 min. Reduce speed to low, add flour , sour cream, cocoa, soda, salt . Beat until blended. Increase speed to medium, beat 1 min. Fold in zucchini, chocolate pieces and walnuts. Spread batter in pan. Bake for 40 min or unitl toothpick or tester inserted in center of cake is clean. Cool cake and sprinkle with confectioners.
